25 Jul Easy Weeknight Dinner
When it comes to weeknight meals we have three requirements: healthy, quick and delicious. It can definitely be a challenge to find recipes that fit all three criteria, but with a little brainstorming and meal planning, you can find great options that take little time. One of our favorite weekday dishes is what we call a “one pan dinner” which is exactly what it sounds like. All you need is veggies + protein and a baking sheet and you are ready to go.
One Pan Dinner:
2 bell peppers (red ,yellow or orange) chopped
1 onion, chopped
2 cups sliced brussels sprouts
2 sweet potatoes, diced
1 package all natural chicken sausage (Applegate farms is a favorite)
Salt/pepper to taste
1 tablespoon olive oil
Preheat oven to 425. Combine all prepared veggies in a large bowl with seasoning and olive oil, coat thoroughly. Spread coated veggies on linked baking sheet and mix chicken sausage in. Bake at 425 until vegetables begin to crisp, about 30-40 minutes.
