20 Oct FLEXfood: Veggie Frittata
Whether it’s a weekend brunch or a breakfast-for-dinner type of night this simple frittata is easy and delicious. With just a few ingredients but full of flavor, this dish is a winner in our book.
8 whole eggs
1 pepper, diced
1/2 white onion diced
2 cups broccoli florets chopped
1 teaspoon Franks hot sauce
salt and pepper to taste
Preheat oven to 375
In a cast iron skillet bring 1 tablespoon olive oil to medium/high heat
Place produce in skillet and cook until it begins to soften
In a mixing bowl crack 8 eggs. Add hot sauce, salt and pepper and whisk until combined
Pour egg mixture into pan with partially cooked vegetables
Cook until edges begin to set, about 5 minutes
Place skillet in the oven and cook for an additional 10-15 minutes or until edges are golden and middle is set.
