12 Jan FLEXfood: Easy Chicken Salad Recipe
We’re all about simple recipes that are packed with nutrition but have few ingredients and take little time to prepare. Our favorite chicken salad (or egg salad if you’d rather) has just five main ingredients and is so flavorful you would never know it was missing the mayonnaise that most salads like this contain.
Chicken or Egg Salad
3 chicken breasts or 1 rotisserie chicken, shredded or cubed
If egg salad use 8 hard boiled eggs
1 whole ripe avocado mashed
1 tablespoon Veganaise
1 tablespoon Dijon mustard
Salt and peppers to taste
Optional: chopped onion, celery or carrot
Combine all ingredients in a large mixing bowl and stir until chicken or egg is fully coated. If too dry add 1 tablespoon Veganaise.
Suggested serving options: on a bed of greens with your favorite veggies or with nut thin crackers for scooping.
